Evaluation of quality changes of blueberry juice during refrigerated storage after high-pressure and pulsed electric fields processing

Abstract A better knowledge of the effect of refrigerated storage on the nutritional and physicochemical characteristics of foods processed by emerging technologies with regard to unprocessed juices is necessary. Thus, blueberry juice was processed by high pressure (HP) (600 MPa/42 °C/5 min) and pulsed electric fields (PEF) (36 kV/cm, 100 μs). The stability of physicochemical parameters, antioxidant compounds (ascorbic acid, total phenolics, total anthocyanins) and antioxidant capacity was studied just after treatment and during 56 days at refrigerated storage at 4 °C. Abstract: This work follows a previous one dealing with the state of conservation study of the wooden part of the roman Acqualadroni rostrum soon after its finding in the seabed of Acqualadroni (Messina, Italy). The archaeological survey and recovery were particularly relevant since this artefact is one of the two rostrums, nowadays known,found together with its wooden part. A systematic investigation of the original materials and the degradation phenomena induced by soluble salts on the wall matrix and on the graffiti of the Inquisition jails of Chiaramonte Palace in Palermo (Italy) was carried out. Built in the XIV century, Chiaramonte Palace was used as Inquisition court during the XV–XVI centuries. The ancient graffiti, recently discovered, represent a unique historical witness of the prisoners that lived during that terrible period. Abstract The Temple G of the Archaeological Park of Selinunte (Italy), the largest in Europe, is one of the most impressive temples in the Magna Grecia. Today, it is completely destroyed due to a strong earthquake occurred in the Middle Ages. The used stone is a calcarenite coming from the ancient and renowned quarries of Cusa near the acropolis.
